Mom’s Potato Salad

This is my favorite potato salad recipe.  Don’t let the combination of pickle juice and mayo scare you, it’s actually quite good.

For this recipe you’ll need:

  • 3 pounds Yukon Gold potatoes
  • 2 large sour dill pickles, chopped
  • 1/2 cup juice from the pickle jar
  • 1/2 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Put the potatoes in a large pot and cover with salted water. Bring the water to a boil and cook the potatoes until they soft all the way through, about 30 minutes.

Let the potatoes cool for about 10 minutes.  Remove the skins and chop.

In a large bowl, combine the potatoes with half of the pickle juice. Add the mayonnaise, pickles, salt and pepper.  Add more pickle juice and salt to taste. The salad should be a bit tart.

This recipe is my mom’s.  When we were young she would add chopped up Spam.  We would eat the Spam first, then the pickles, then finally the potatoes.  Sometimes I add one or two chopped hard boiled eggs.

The salad is best after sitting for a few hours in the refrigerator.  Garnish with salt and serve.
