Last week we received a celery root in our CSA farm box. I couldn’t believe how amazing this recipe turned out.
This is a great side dish for a dinner party. It’s easy and seems much fancier than it is. Celery root puree is a nice side with grilled meat or fish.
For this recipe you’ll need:
- one 1/2 pound celery root
- 1/2 pound potatoes (I like Yukon gold)
- 1 apple or pear
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 tablespoons half & half
- salt and pepper
This recipe scales easily. If you have a different celery root, match its weight with potatoes and scale the other ingredients accordingly.
Bring a large pot of salty water to a boil.
Trim and clean the celery root and chop it into ~4 large chunks. Peel the potatoes and chop them into similarly sized chunks. Boil the vegetables until they are soft (about 20 minutes).
Peel, core and chop the apple into large chunks.
Put the cooked vegetables, apple, oil and butter a food process and process for a few seconds. Slowly add the half and half until you achieve the consistency you like. Season with salt and pepper.
Serve warm.
The puree can be made ahead and reheated.
